Our Macabeu is a convivial wine that tantalizes the tastebuds with its freshness, vivacity and saline notes.
The grapes are harvested early in the morning so as to avoid any risk of oxidation. The grapes are brought to the winery while they are still cool and are pressed immediately before undergoing fermentation at low temperatures. Our winemakers have chosen to complete malolactic fermentation on 30% of the wine in order to lend richness and aromatic complexity to the wine. Our Macabeu is aged on fine lees until February for roundness and freshness.
This wine, with its lovely green-yellow hues and brilliant highlights is redolent of delicious aromas of tropical fruit (mango), spice (fennel, anise) and flint as well as notes of pencil lead.
Macabeu originated in Catalonia, Spain. It is one of the grape varieties used in Côtes du Roussillon, Banyuls, Maury and Rivesaltes wines. It yields fine, fruity wines that resist oxidation well. It may be vinified to produce dry or sparkling white wines and when harvested very ripe, it is used to make ambercoloured fortified wines. It is a secondary varietal in fortified red wines and the main varietal in fortified white wines.
