100% Viognier
Of all the "Les Jamelles" wines, our Viognier is the one that is currently the most fashionable with wine lovers. With its fruity aromas, roundness and freshness, Viognier is a white grape variety that is well worth discovering.
Early harvesting. The alcoholic fermentation takes place in temperature-controlled stainless steel vats (15 to 18°C) to preserve as much fruit and freshness as possible. Any risk of oxidation is avoided in order to preserve the full aromatic potential of the grapes. Finally, the wine is aged for several months in vats on its lees in order to develop its characteristic floral scents. Malolactic fermentation is not carried out.


















- Appearance: Lovely pale gold colour. Relatively syrupy consistence. - Nose: A rich, very aromatic wine. Lots of characteristic fruity scents (varietal aromas), such as apricots and fresh peaches. It also displays floral nuances, such as acacia flowers, lilies and, in particular, the famous "blue lavender" of Provence, together with a hint of fresh bananas. - Palate: Our Viognier is very rich, round and syrupy on the palate, but displays good freshness and acidity, which prevents it from being too heavy. The richness and acidity are exceptionally well-balanced. A honeyed finish.
The Viognier grapes in our wine come partly from the Hérault département between Béziers and Montpellier (fruit and roundness) and partly from the Aude Valley in the south of the Minervois, near the town of Carcassonne (southwestern Languedoc). The Upper Aude Valley has many similarities with the Northern Rhône Valley, where the Viognier variety comes from: it has a sunny climate and, thanks to the neighbouring mountains of the Cévennes and Pyrenees, enough rainfall to prevent dryness. The limestone soils and pebbles, and the altitude contribute to maintaining cool night-time temperatures. These vines grow on slopes at an average altitude of 150 to 200 m. Average age: 10 years. Pruning method: mainly "Guyot" (trellised). Fairly low yields of around 40 hectolitres per hectare.

Ideal as an aperitif, with seafood, fish or slightly bitter tasting vegetables, such as asparagus, which is sweetened by our Viognier. It is also goes very well with fruit tarts (a rather original match!).
