100% Sauvignon Blanc
The vines in the foothills of the Pyrénées are harvested at the end of August while those of the Etang de Thau area are harvested early September, which is a late-harvest period for the Languedoc region. Racking of the must. Fermentation at 18°C in order to develop all the typical characteristics of the Sauvignon Blanc grape variety. The wine is aged on its lees with regular stirring in order to extract fine aromas.
This wine has flavours of rose bud, grapefruit and strawberry. It is a fresh and aromatic wine with hints of citrus, a long nice palate and hints of chlorophyll on the finish. The whole aromas are perfectly kept thanks to the screw cap which limits oxygen entering the bottle.
This Sauvignon Blanc comes from two distinctive terroirs: - Vines in the foothills of the Pyrénées, cultivated on clay-and-limestone soils which benefit from a rainy weather. - Vines situated near the Etang de Thau, cultivated on pebble soils. The vines benefit from a dry climate with morning dew due to their geographical position close to the Mediterranean coast, which can sometimes bring some iodine notes. The sunny climate as well as the cool nights allow a better maturation of the aromas that made the particularity of the Sauvignon Blanc.
Serve chilled at 10°C as an aperitif, with seafood (crab, grilled crayfish, Saint Jacques).
