After several years of testing new vinification techniques at our winery in Monze, we are very proud to launch our very first Les Jamelles cuv\u00e9e with no added sulphites!<\/p>\n
How to produce such a wine? The grapes, in perfect health, were harvested at their peak of ripeness\u00a0and brought to the winery, protected by dry ice, in order to prevent\u00a0oxidation. Constant attention was required then during\u00a0the vinification and ageing process to avoid the development of undesirable bacteria and prevent the wine from oxidizing.<\/p>\n
What is the interest of this kind of wine? Proposing a more natural wine that will display remarkably intense and distinct expression of the fruit.<\/p>\n
And why such a name ‘Minimalist*’ and such a spare label? To illustrate our minimal intervention on the wine! Let’s concentrate on the wine flavours and nothing else :)!
